In the renowned area of Maipú, home to hundreds of vineyards and olive groves with the best views of the Andes Mountains, there are optimal climatic conditions for the development of this natural agriculture. The desert climate and its thermal amplitude favor the production of the local variety of oil known as “Arauco”.
The magic of olive oils, visiting renowned wineries in the area, will introduce us to the exciting universe of varietals, where innovation and the search for the best expression of the soil will be reflected in this specialized course.
We will learn to differentiate the different stages of the crops, as well as the agricultural techniques, which are focused on sustainable practices for soil management and biodiversity of their plantations.
The masters of the oil mill will show us the manufacturing plant and we will be able to connect with the family history of each establishment. We will learn all about the liquid gold, its origin, secrets, its uses and the challenges that surround a constantly growing industry.
We will start with an introductory talk that will put us in context, we will learn all about the plantations and their varieties. We will learn how to classify the different varietals according to their acidity as well as the details of the harvest. To become experts, we will have to put our senses at the service of the tasting, the visual aspect, the olfactory and gustatory stage until we reach the tactile phase.
To end this magnificent practice, it will be time for the tasting, where we will be able to savor the different varietals that stand out in Mendoza and the world.
But no experience will be complete without sharing and enjoying lunch, where we will be able to taste the exquisite dishes of the restaurants we have selected to complement this particular course.
After this experience you will be able to classify any olive oil, but undoubtedly the real tasting note will be the one made by your senses.
